I am dreaming of returning to Ireland! The closer it gets to St. Patrick's Day the more I want to be on a plane back to Dublin. We fell madly deeply in love with Ireland while we were there.Oh my goodness the people, the sites, the food, the Guinness was all so amazing.

We did learn while we were in Ireland that Corned Beef and Cabbage is not really something that is served in Ireland.Even knowing this I had to make up a Crock Pot Guinness Corned Beef and Cabbage Recipe. It just seemed like the thing to do.

When I think of St. Patrick's Day I always think of Corned Beef and Cabbage oh and Guinness so why not combine them into one heavenly dish.

Do you think of corned beef and cabbage for St. Patrick's Day?

This recipe makes a ton! I love that I can make other recipes with the leftovers. You can make a killer Guinness Corned Beef grilled cheese sandwich! It is amazing!

Ingredients needed

  • Baby red potatoes
  • Onion
  • Water
  • Corned beef brisket with spice packet
  • Guinness
  • Cabbage

Equipment Needed

Slow Cooker - I like to use a 6 or 8-quart slow cooker for most recipes. I want to make sure that the entire piece of corned beef brisket is covered in as much Guinness as possible.

Kitchen Tongs - You will want a sturdy pair of kitchen tongs to get all of the cabbage and then the corned beef out of the crockpot. The liquid will be bubbling hot so you want to be really careful when removing the corned beef.

Strainer Basket - I love using this to get the potatoes out of the crockpot. You can let the juice drip off a bit before serving. It is easy to clean and helps get all of the yummy goodness from the crockpot easily.

We have a ton of Crock-Pot recipes on the blog. You can see all of them in our Crock Pot Recipe Section. This is one of our favorite recipes to make. Everyone loves this Crock Pot Corned Beef and Cabbage recipe. It is so easy to make and tastes amazing!

This is my go-to recipe for corned beef. But I don't wait until St. Patrick's day, I love it, so I make it whenever I want. Of course... St Patrick's day, it's a requirement. The only thing I do different is that I use the entire bottle of Guinness and leave 1 cup of water out. Comes out perfect every time. Thanks for giving me this amazing version.

Lovely recipe variation thank you. I can assure you it is most definitely an Irish dish originating in Ireland. Unusual that you didn't stumble across it while visiting as relatives inform me it is in almost every pub in Dublin. I have nana's recipe and don't usually try anything else but yours was lovely. Thank you.

Hi Betsy, some times I am not really sure how many it serves. There are only 2 of us so I can judge it only off of how long it lasts here in our house.

This looks great! 8 hours high seems like a lot. Is it 8 hours on low?

    Reply

    • Tammilee

Hi, I have always done it on high. the meat comes out super tender along with the potatoes. There is enough juice in the crock pot that it does not dry out.
